Lemon Cashew Couscous

Ingredients:

  • 2 cups Couscous, cooked
  • 1 cup Green Bell Pepper, diced
  • 1/2 cup toasted Cashews
  • 3/4 cup Red Onion, diced
  • 1/2 bunch Cilantro, chopped
  • 1 Garlic Clove, minced
  • 1 Green Onion, sliced thin
  • 1 Lemon, zested & juiced (about 1/4 cup of juice)
  • 2 Tbsp Olive Oil
  • 2 tsp Black Pepper
  • 2 tsp Sea Salt

Preparation:

  1. Combine the first 7 ingredients in a large mixing bowl.
  2. Combine the next 4 ingredients and drizzle over Couscous
  3. Cover and refrigerate to let the flavors blend.
