Lemon Cashew Couscous
- 2 cups Couscous, cooked
- 1 cup Green Bell Pepper, diced
- 1/2 cup toasted Cashews
- 3/4 cup Red Onion, diced
- 1/2 bunch Cilantro, chopped
- 1 Garlic Clove, minced
- 1 Green Onion, sliced thin
- 1 Lemon, zested & juiced (about 1/4 cup of juice)
- 2 Tbsp Olive Oil
- 2 tsp Black Pepper
- 2 tsp Sea Salt
- Combine the first 7 ingredients in a large mixing bowl.
- Combine the next 4 ingredients and drizzle over Couscous
- Cover and refrigerate to let the flavors blend.
