Halibut Cheeks!

These fresh Halibut cheeks are the most tender portion of the fish. Try them lightly grilled, sauteed in butter or pan-fried. They are most delicious!

I remember when, as a child, my father would stop by the Tacoma, WA docks on the way home from work and pick up halibut cheeks for our dinner. In those days the cheeks were the least expensive part of the fish and, thus, a treat he could afford to buy for the family.
