Oregon can be proud of our Marine Stewardship Council certification for Albacore Tuna. The Oregon Tuna fishery has been certified Sustainable by MSC. Additionally, these Albacore are smaller so they bio-accumulate less mercury than other Tuna. They are high in fat so they cook up moist and delicious. I like to sear each side in a hot pan, leaving the center very lightly cooked or even raw. A squeeze of lime and a dash of smoked salt complete the preparation.
