Sockeye Season is Over, (but we still have a bunch of fresh fillets!) I love to grill these fillets over a hot charcoal fire, adding just a little salted butter brushed on top. They cook quickly and hold their moisture well, but be careful not to overcook!
This year’s Sockeye harvest was about 30% less than projected, leading to scarce supply and rising cost.
