Gluten-Free CupcakesThe fundamentals of our food philosophy at the LifeSource Deli are so basic, there is no need for anything other than the highest quality simple and pure organic ingredients. Prepared from scratch with each new day, our fresh meals, snacks, and baked goods are put on the shelf for you, our ever-welcome customers. There are many recipes that come from the deli. Each ingredient used is chosen specifically to ensure quality and optimum nutrition. Grains and flours—both common and unusual—are featured in many recipes, including baked goods, soups, pizzas, and entrée dishes.

“Alternative flours are great as long as you know how to use them,” Assistant Deli Manager Joel Villarreal said. “By substituting half the white flour required for a recipe with organic wholewheat flour, our bakers produce a denser, healthier brownie recipe.”

Jen Haas, one of our bakers, has many methods for using alternative flours. White rice flour, tapioca flour, and a bit of potato starch are key ingredients in her gluten free cupcakes. Jen finishes the cupcakes with decorative toppings and fresh whipped creams and they are as beautiful as they are delicious! Gluten free, vegan muffins are made using white rice flour and corn meal. Garbanzo flour is also used lightly in the recipe.

Our pizza dough is made daily with spelt, whole wheat, and unbleached white flours. Made from scratch, the dough is proofed and hand-tossed before being topped with fresh, organic ingredients. We also offer a pizza whose crust is made entirely with gluten free ingredients! Its crust is made with rice, tapioca and garbanzo flours.

The LifeSource Deli has been increasing its “Made With Gluten Free Ingredients” offerings. About one percent of the US population has Celiac disease, which is an autoimmune digestive disease that damages the small intestine when gluten is ingested, interfering with the absorption of nutrients. It is common to be intolerant to gluten, yet not be diagnosed with Celiac disease. Researchers estimate anywhere from 6% to 50% of Americans have gluten sensitivity.
