Savory Spinach, Onion & Herb Dip

DipA creamy, easy-to-make dip that would be perfect for any casual summer gathering, backyard supper or picnic. Makes approximately 3 cups.

  • 1 large organic onion, diced
  • 2 Tbs. organic butter
  • 2 Tbs. organic tamari soy sauce
  • 1 cup fresh organic spinach, washed & dried
  • ½ cup organic sour cream
  • ½ cup organic plain yogurt
  • 1 cup organic ricotta cheese
  • 3 oz. organic cream cheese
  • 2 drops Pickapeppa sauce (optional)
  • 2 Tbs. each fresh chives, parsley & basil, chopped

In a skillet, sauté onion and butter. After the onions are slightly cooked, add tamari. Cover and cook until onions are soft. Put the cooked onion mixture and all remaining ingredients into a blender or food processor and whirl until smooth. Chill and serve with your choice of fresh vegetables, chips or baguette slices.
