Shrimp Macaroni Salad
1/2 Pound Edison Gluten-Free Elbow Macaroni
2/3 Cup Chopped Celery
1/4 Cup Chopped Bell Pepper
1 Hardboiled Egg, Chopped
2 Tablespoons Pickle Relish
1 Teaspoon Seasoning Mix (The original recipe calls for Old Bay Seasoning, and we have included a generic recipe that approximates Old Bay Seasoning since it is not available at LifeSource.)
1/2 Cup Mayonnaise
1/8 Cup Lemon Juice
Salt and Pepper To Taste
1/2 to 3/4 Pound Cooked/Peeled Salad Shrimp or Fresh Crab Meat
Boil the Elbow Macaroni until al dente (firm to the bite.) Rinse with cold water, drain and set aside to cool.
In a large bowl, mix all the remaining ingredients, except the shrimp or crab meat.
Add the cooked macaroni last and refrigerate until ready to serve.
Add the shrimp or crab meat right before serving.
The seasoning mix (Recipe 1)
- 4 whole bay leaves
- 1 teaspoon black peppercorns
- 1 teaspoon white peppercorns
- 2 teaspoons celery seed
- 3 whole cloves
- 1 allspice berry
- 1 teaspoon salt
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon mustard seed
- 1/8 teaspoon freshly grated cinnamon
- 1/8 teaspoon ground ginger
- 1/8 teaspoon ground mace
Combine all ingredients in spice grinder. Grind until finely ground. Store tightly covered in dark cool place in airtight container. You can vary the spice amounts according to your taste. Take a sniff of this mixture when it’s done and add more of any of the ingredients. You can also add cardamom and nutmeg to this blend if you’d like.
